- 3 ripe bananas (the riper, the better!)
- 1 cup all-purpose flour
- 2 tbsp brown sugar (adjust to taste)
- 1 tsp vanilla extract

- A pinch of salt
- 1 tsp baking powder (optional, for a slightly fluffier texture)
- Water (1–2 tbsp if needed to loosen batter)
- Oil for frying (vegetable or canola)
🔪 Instructions
1: Mash the Bananas:
- In a mixing bowl, mash the ripe bananas with a fork until mostly smooth (a few small chunks are okay).
2: Mix Ingredients:
- Add the sugar, vanilla, cinnamon, nutmeg (if using), and salt. Mix well.
- Stir in the flour and baking powder. Combine until a thick batter forms.
- If it’s too thick, add a tablespoon or two of water to reach a scoopable consistency.
3: Heat the Oil:
- In a frying pan, heat about ½ inch of oil over medium heat.
4: Fry the Fritters:
- Drop spoonfuls of the batter into the hot oil (flatten slightly with the back of the spoon).
- Fry for about 2–3 minutes on each side, until golden brown and crispy on the edges.
5: Drain & Serve:
- Remove fritters and drain on paper towels.
- Serve warm. You can dust with powdered sugar or drizzle with honey if desired.
